Bulb sections are carefully cut open to reveal a pouch at the
base of each sprout.
This is carefully bruised or scored causing a scab to form,
which makes the leaves curl as they grow.
By selectively scoring some sprouts the artisan can control
which parts curl and which grow straight,
allowing them to create all sorts of shapes.
